Begin preparing this cheesy, vegetarian dish by roasting the red onion and butternut squash in a pan with fresh thyme, and wilt the kale in chopped garlic. Once baked, spoon the homemade honey, sherry vinegar, and olive oil dressing on top of all of the veggies. Mix the cooked polenta with fontina and parmesan cheese, and then top with grated parmesan and a drizzle of olive oil to serve.

Oh kale yeah!

This dish was not only quick and easy, it was downright crave-able. The combination of creamy polenta with roasted vegetables was fantastic. Normally I wouldn't roast kale unless it was to turn in into a kale chip, but this masterpiece, somewhere between a sauté and a salad, definitely worked.

Outstanding!

Very fresh, perfect seasoning. The sauce on the vegetables paired perfectly with the cheesy polenta. It was very easy to put together as well, the recipe is easy to follow. We’ll be getting this again!

Another Amazing Dish

The combination of the cheese, polenta, kale and butternut squash was delicious! Great combination of seasonings and since I live alone I actually had three meals with this dish❤️
