I’m just a normal gal who enjoys delicious, easy food. I loved this recipe! Simple instructions. Fresh ingredients. Can’t lose! I added additional lime juice because I love lime, and I used less cilantro than called for. I also added garlic powder to the squash medallions.

The flavors of this meal compliment one another perfectly, including the zesty quinoa and the perfect addition of avocado and cilantro. Don’t let the curry scare you away if you are not a fan. It does not overpower the dish and it flavors the salmon in a surprisingly wonderful way. All the ingredients are wholesome and the portion is generous. If I can control myself, I typically have enough for lunch the following day. The whole meal takes only 30 minutes to prepare and the minimal effort seems disproportionate to the outcome. This is definitely a recipe I will come back to again and again!
